
I hope you are thinking about the unique recipe of gluten-free rice flour galette con salsa. I have a guilty pleasure ordering crepes from a local popular café for delivery. One day, they were so busy that the wait was very long. I did not want to wait that long and happened to remember that my mother used to make crepes at home.
I looked for ingredients in the pantry and realized that I can make crepes/galettes myself. It is simple and you can make it whatever you want, savory or sweet galette. Who needs a fancy café when you can prepare gourmet brunch/dessert at home?

Ingredients

Galettes
- Ingredients for 2 Galettes:
- ¼ cup Rice Flour
- 1/3 cup Milk
- ½ Egg, beaten
- ½ tablespoon Margarine or butter, melted
Galettes
- 4 Turkey Slices or Ham
- 2 Eggs
- 1/3 cup Milk
- 1 cup Shredded Cheese
- 1 Avocado
- Red Salsa

Directions
Step 1
Mix rice flour, milk, ½ beaten egg, and melted margarine in a bowl in that order. (Make a hole in the center and add milk little by little to avoid clumps. Use spatula to mix.) The mixture should be as thin and smooth as crepe batter.
Step 2
Spray with oil and heat the pan over medium-low heat. Pour half of the rice flour mixture slowly with a ladle in a circular motion.
Step 3
When the surface starts to dry, place turkey slices in the center. Make a dam with cheese first. Slowly drop an egg in the center so that it stays in place. Add a teaspoonful of water and immediately cover with a lid for steaming effect.
Step 4
When the egg is at your desired doneness, uncover and turn the heat to medium high to make it crispy. Do not burn. Fold the edges to make a square shape.
Step 5
Serve with salsa and avocado.

- For sweet galettes, you may add Chocolate spread, banana, strawberries, blueberry jelly, butter and sugar, etc. Invite your loved ones for a posh café experience at your home.
